This year we celebrated Hadley’s fourth birthday with a magical, unicorn themed party. Think pink, sparkles, glitter and, of course, unicorns. When it came to deciding on drinks, I knew we needed a speciality cocktail and I knew it had to be pink! Pink lemonade seemed to fit the bill since it would be something that both kids and adults would love but I wanted a spiked version for us adults braving a kid’s birthday party on a Sunday afternoon.
I wanted something that was fruity and refreshing and with a little (read: lot) of testing I finally found something that met all the needs and ended up being a crowd favorite.
This double sided letter board by Natura Happy was the perfect way to let guests know the difference.
4 cups prepared pink lemonade (I used a low calorie one).
2/3 cup raspberry flavored vodka (I used Stoli’s but any brand would do).
1 bottle Prosecco, chilled (La Marca is my favorite for something like this, but you can use your favorite).
1 pint frozen raspberries
Mix pink lemonade and raspberry vodka in pitcher and chill. Just before serving, add full bottle of Prosecco and handful of frozen raspberries.
The best part of this drink is the raspberries. Eat them and thank me later.
